
Description: Nothing screams summer like a refreshing cold salad, using fresh vegetables, citrus, and your favorite rice.
Ingredients:
- 1 cup of rice
- a little oil
- garlic
- salt
- 2 cups water
- 1 bunch chopped cilantro
- 2 or 3 fresh diced tomatoes
- 1 can of black beans, rinsed
- 1 16-oz package of frozen corn
- Salt, Pepper, lime/lemon juice, lemon pepper to taste
Steps:
- Fry the rice for a bit until opaque
- Add 2 cups of water
- Cover, let it cook on low or medium heat
- Make sure to wash, rinse, and drain the beans
- Frozen corn goes in the bottom of the bowl
- Add the warm rice after it is cooked
- Add the remaining ingredients
- Add salt, pepper, lime/lemon juice, and lemon pepper
- Stir, taste, adjust as needed
