Cold Rice Salad

Description: Nothing screams summer like a refreshing cold salad, using fresh vegetables, citrus, and your favorite rice.


  • 1 cup of rice
  • a little oil
  • garlic
  • salt
  • 2 cups water
  • 1 bunch chopped cilantro
  • 2 or 3 fresh diced tomatoes
  • 1 can of black beans, rinsed
  • 1 16-oz package of frozen corn
  • Salt, Pepper, lime/lemon juice, lemon pepper to taste


  • Fry the rice for a bit until opaque
  • Add 2 cups of water
  • Cover, let it cook on low or medium heat
  • Make sure to wash, rinse, and drain the beans
  • Frozen corn goes in the bottom of the bowl
  • Add the warm rice after it is cooked
  • Add the remaining ingredients
  • Add salt, pepper, lime/lemon juice, and lemon pepper
  • Stir, taste, adjust as needed
